After racing road for umpteen years, it amazes me how these outfits can charge $90+ for a race. I remember paying $30-35 per race with a payout of maybe $700-1000. And what's the payout for these $90 races?

6ix - seeing more and more of that trend especially when they are linked with a 'cause'. As long as the money goes to a qualified 501c or similar non-profit wherein the entry fee can qualify for a tax deduction (and you get your 0% deduction if you are part of the 51'ers or as much as 50% effective return if you are a 10'er) then one can expect that these entry fees will likely continue to move north of $100.
Real "Races", as run by UAST and/or USAC should never hit those levels unless there are soms serious preems, schwag, free-food, raffle prizes, and the venue is worthy of the fee.
But then I've been going cheap as our local TT is a whole $25. I can walk to the start line in 60 minutes or less if I go via the MTB trails to get there. I just ride out from home. Don't even waste the gas as I can do a fairly good warm-up on the road.
